This delicious fried hamburg patty was a favorite food on mine as a child.
To recreate the taste I had stored in my mind, I experimented with many differ
ratios of beef to pork before arriving at the perfect ration I captured in my
recipe. The inside is tender and juicy. So delicious! I like to use a bit of “Tonkatsu
sauce” on top of my Menchikatsu but the fried Hamburg stead is already seasoned
very well, so you don’t need too much sauce on top. You can find “Tonkatsu
sauce” at most Asian Markets.
Menchikatsu (Japanese Style Fried Hamburg Steak)

1lb of
ground pork
·
½lb of
ground beef
·
1 onion
·
1 egg
·
½ tablespoon
of Kosher salt
·
1
teaspoon of consommé granule
·
1 tablespoon
of brown sugar
·
⅛ teaspoon of
freshly ground black pepper
·
⅛ teaspoon of
freshly grated nutmeg
·
¾ cup
of bread crumbs
·
¼ cup
of white wine
·
¼ cup
of whole milk
·
all
purpose flour (as needed)
·
beaten
eggs (as needed)
·
bread
crumbs (as needed)
·
vegetable
oil for frying (as needed)
·
Japanese
“Tonkatsu sauce” (optional)
1.
In a
small bowl, soak the bread crumbs in the white wine and whole milk.

Mince
the onion.
3.
In a
large bowl, mix together the ground pork, ground beef, minced onion, salt,
pepper, consommé granule, sugar, grated nutmeg, and the egg.

Add the
soaked bread crumbs into the meat mixture and mix well until it becomes sticky.
5.
Shape
the meat.
6.
Coat
each patty with flour and dip into the beaten eggs until fully coated, then cover
with bread crumbs.
7.
Heat
the vegetable oil at approximately 340F and fry carefully in the oil until the
bread crumbs are golden brown and crispy. Use a thermometer to check the
oil temperature. If possible, fry from the back burner for safety.
8.
Place
the fried meat patties in a vertical position on a metal rack, over paper towel
covered tray. (The oil drains better in a vertical position.)

Serve
with sauce (Tonkatsu sauce) as desired.
