An Amazing Combination! Unagi and Avocado Free Style Sushi

This is a free style sushi called “chirashi-zushi” or “maze-zushi” in Japanese. I added Unagi (eel) and avocado. The taste is just like caterpillar roll. Very yummy and rich! An Amazing Combination! Unagi and Avocado Free Style Sushi

·      3 cups of cooked sushi rice (recipe: Here it is! Maki Roll Sushi Recipe!)
·      some ginger
·      1 to 2 tablespoons of roasted sesame
·      2 packs of Unagi (eel)
·      1 to 2 avocado
·      10 Shiso leaves
·      4 eggs
·      some salt
·      some Japanese sake
·      optional: radish sprouts

1.     Finely chop ginger. Mix the ginger and roasted sesame together with sushi rice.
2.     Beat the eggs and add a little bit of salt and Japanese sake. Make thin omelets. Cut the omelets into thin strips.
3.     Remove the skin and pit from the avocado. Cut the avocado into bite sized pieces.
4.     Cut the Unagi (eel) lengthwise in half, then cut into half an inch pieces widthwise.
5.     On top of sushi rice, layer half of the omelet strips first, then avocado, Unagi(eel) and the remaining omelet strips.
6.     Cut Shiso leaves and decorate on top.

7.     Serve as is, pour some soy sauce, or use seaweed to wrap like sushi.

Chicken Tatsuta Sandwich (Japanese Crispy Chicken Sandwich)


This is one of the popular sandwiches at the burger place in Japan. The soy souce and the ginger flavor go really well with the cabbage and soft burger bun. Try this out and I am sure you will love it!



Chicken Tatsuta Sandwich (Japanese Crispy Chicken Sandwich)
(Serves 4)

·      4 to 8 slices of Tatsuta-Age (Recipe: Tatsuta-Age (Deep Fried Chicken))
·      4 hamburger buns, preferably egg rolls
·      2 cups of cabbage, cut into thin strips
·      some mayonnaise
·      some butter

1.     Deep-fry the chicken Tatsuta. It is better to cut the chicken thighs at a 45 degree angle so that a piece could be bigger than bite size in order to adjust to the size of the bun. Follow the recipe for Tatsuta-Age (Deep Fried Chicken).



2.     Cut the cabbage into thin strips.


3.     Rinse the cabbage in cold running water and strain well.


4.     Slice the buns in half and warm them up in a toaster oven. Spread butter on the buns.


5.     These are the soft and slightly sweet buns, which I prefer to use.


6.     On the bottom half of the bun, put the adequate amount of cabbage strips.


7.     Put the fried chicken Tatsuta then pour mayonnaise over it and put on the top half of the bun. Serve.

Croquettes using Mashed Potatoes

Do you have left over mashed potatoes from the holidays? Try making these croquettes with them. Adding bacon and cheese will melt your mouth. These are yummy appetizers for your family and guests!


Croquettes using Mashed Potatoes

·      3cups (720cc) of mashed potatoes
·      5 pieces of bacon
·      ½cup of cheddar cheese
·      3 scallions
·      some all-purpose flour
·      some egg
·      some breadcrumbs
·      some frying oil

1.     Chop the bacon into small pieces and cook them until they are nice a crispy. Place the cooked bacon on a paper towel to remove excess oil.



2.     In a bowl, mix mashed potatoes, cooked bacon, scallion and cheddar cheese.



3.     Shape the mixture from 2) into a golf ball size.


4.     Beat the egg. Coat each ball in order of flour, egg, and breadcrumbs.




5.     Heat up frying oil in a pan and fry your balls until it crisps. Try to fry it over high heat quickly. Remove croquette from oil if cheese starts to come out.



6.     Serve hot.
