Peach Fool


This is a very beautiful and delicious English dessert called “fool”. I love to use my homemade peach compote for my fool but you could use any fresh fruits or canned fruits you like. It is very simple and easy to make so try it out!


Peach Fool

·   peach compote (refer to the link for my peach compote recipe→Peach Compote)
·      heavy cream
·      granulated sugar

1.     Take out the seeds from the fruits you are using.



2.     Puree the fruits. Add sugar here if you are using fresh fruits.



3.     Add granulated sugar to the heavy cream and whip. I put less sugar in my heavy cream to compliment my sweet and sour peach compote.


4.     Put the pureed fruits and whipped cream together and fold few times until it becomes a light marble.



5.     Refrigerate for more than 2 hours and decorate them in a glass cup.

Meatball Sub


This classic sandwich is loved by people of all ages here in America. I get a big “YES!!” whenever I tell my family our lunch will be Meatball Subs. It is important to stuff this sandwich with generous portion of meatballs and ooze it with tomato sauce and melted cheese. I prefer using mozzarella but some prefer provolone. This sandwich can be a bit messy so prepare your napkins and you are good to go!


Meatball Sub [serves 4]

 4 good quality sub rolls
  12 to 16 Meatballs (refer to the link for my meatball recipe→Italian meatball)
•  Tomato sauce
•  Shredded mozzarella cheese

1. Preheat the oven to 350F.
2. Heat the meatballs and the tomato sauce in a pan.  Add enough tomato sauce to evenly coat the meatballs.


3. Once heated, arrange the meatballs in the rolls and cover with tomato sauce then top with a generous amount of mozzarella cheese.


4. Place the Meatball Subs in the oven until the bread is toasted and the cheese melts.

Italian Meatballs


You won’t be disappointed with my famous savory Italian meatballs recipe!
These are meatballs you could serve as meatball spaghetti, meatball sub, or simply on it own with maybe a glass of beer!


Italian Meatball

  • 1/2lb of ground beef & 1/2lb of ground pork mix, or 1lb of ground pork
  • 1 egg
  • 120cc or 1/2 cup of bread crumbs
  • 60cc or 1/4cup of milk
  • 1/2 teaspoon of salt
  • 2 teaspoon of brown sugar
  • a pinch of nutmeg
  • a pinch of pepper
  • 120cc or 1/2 cup of powdered Parmesan cheese
  • fair amount of minced Italian parsley (the more the better)
  • oil for frying

1.     Soak the bread crumbs into milk.
2.     In a large bowl, mix all the ingredients well including 1.)
3.     Take a portion of meat in hand and roll between palms to make a ball shape. Fry and let the oil drain on a rack.


4.     Serve as is, or make it a spaghetti and meatballs!

Peach Compote


There are many different ways to enjoy this peach compote besides eating it as is. You can turn it into a jelly, puree it and pour it into a cocktail, or make “fool”, an English dessert made by folding pureed fruits into a sweetened whipped cream.



Peach Compote

·      7-8 peaches
·      250 g or 1 and ¼ cup granulated sugar
·      240cc or 1 cup white wine
·      120cc or 1/2cup water
·      1 whole vanilla bean

1.     Peel the peaches by either using a peeler, or boil the peaches in water for few seconds until the skin splits.


2.     Combine all the ingredients including the peaches in a deep pot and cover the surface with a cooking sheet. Cook over medium heat.


3.     When the mixture starts to boil, turn the heat down to low, and continue cooking for 10 to 15 minutes. Cook until the peaches are soft and turn off the heat. If a toothpick goes easily into the peach it’s done.


4.     Leave the pot with the lid on until the mixture cools down. Put it in the fridge.


5.     Serve once it’s chilled!
